Vitamin E functions as an antioxidant in the body, protecting polyunsaturated fatty acids (components of cellular membranes) and other oxygen-sensitive substances like vitamins A and C from oxidation. In premature neonates, a deficiency in vitamin E can cause irritability, edema, thrombosis, and hemolytic anemia.
